Potato, Artichoke and Swiss Cheese Gratin

Serves 6

This artichoke-themed spin on potatoes au gratin is the perfect side dish for any dinner party.

Ingredients

5 lbs potatoes, washed and dried
1 lb Swiss cheese, grated
3 cup fresh or canned Artichokes
2 cups heavy cream
2 cups milk
1 ½ tsp salt
½ tsp white pepper
½ tsp nutmeg

Method

  1. In a saucepan combine the cream, milk, salt, pepper and nutmeg, bring to a boil and reduce to simmering.
  2. Slice the potatoes very thin as you use them.
  3. Layer into a casserole dish and top with artichokes and cheese and repeat until all potatoes are used.
  4. Press down on potatoes to compact the ingredients.
  5. Ladle milk mixture onto potatoes until just the top layer of potatoes is exposed.
  6. Place in 375-degree oven for 1.5 hours.
  7. For the first ½ hour of baking time, use a spatula to press down on the potatoes every 10 minutes.
  8. Remove from oven and allow setting for 20 minutes before serving.
