Potato, Artichoke and Swiss Cheese Gratin

Serves 6
This artichoke-themed spin on potatoes au gratin is the perfect side dish for any dinner party.
Ingredients
5 lbs potatoes, washed and dried
1 lb Swiss cheese, grated
3 cup fresh or canned Artichokes
2 cups heavy cream
2 cups milk
1 ½ tsp salt
½ tsp white pepper
½ tsp nutmeg
Method
- In a saucepan combine the cream, milk, salt, pepper and nutmeg, bring to a boil and reduce to simmering.
- Slice the potatoes very thin as you use them.
- Layer into a casserole dish and top with artichokes and cheese and repeat until all potatoes are used.
- Press down on potatoes to compact the ingredients.
- Ladle milk mixture onto potatoes until just the top layer of potatoes is exposed.
- Place in 375-degree oven for 1.5 hours.
- For the first ½ hour of baking time, use a spatula to press down on the potatoes every 10 minutes.
- Remove from oven and allow setting for 20 minutes before serving.
