CUISINE: Award-winning Executive Chef Jason Franey oversees the kitchen at Restaurant 1833, further establishing the restaurant as a sought-out dining destination in Monterey. Franey, a 2011 FOOD & WINE magazine “Best New Chef,” brings his modern technique and approachable style to the menu highlighting the regionally-specific bounty of the area. Dish highlights include Guajillo Chili Crusted Baby Back Pork Ribs wrapped in Feuille de Brik and served with Nuac Mam Cham dipping sauce and the 1833 Burger with fermented Swank Farms cucumbers, Monterey jack cheese, tomato confit, and grilled red onions served on a milk and honey roll with sauerkraut dusted steak fries and aioli. Alongside Franey's menu, Coastal Luxury Management Corporate Pastry Chef Ben Spungin offers a ground-breaking pastry program with desserts including a “Cookie Jar” presentation offering a variety of treats, sweets, and cookies, and a Greek Yogurt Panna Cotta with puffed wild rice, honey, bee pollen, olive oil cake, yuzu granita, and candied kumquat. DÉCOR: Located in the former Stokes Adobe in Monterey, Restaurant 1833 resides in a national heritage site that is rich with historical elements from Monterey's past. Named after the year the building was established, 1833, the building once housed an apothecary, was home to California's first newspaper press, was formerly the famous "Gallatin's" restaurant, and contained the first kiln in California. The two-story restaurant is a design-forward space with regal, turn-of-the-century elements that play homage to the building’s rich history in each of the seven interior spaces. The restaurant's outdoor space provides an intimate setting for al fresco dining, and a patio area with four fire pits which provide the perfect space for guests to sit back and relax while enjoying various small bites and custom cocktails. WINE/COCKTAILS: The wine list is comprised of bottles and selections by the glass from local and international artisanal and cult producers that have been hand-picked by Wine Director Bernabe de Luna. Behind the bar, 1833's beverage team has created a menu of original and classic cocktails with a twist inspired by the apothecary history of the building, featuring house made elixirs, syrups and bitters, as well as signature table side service.
